WHITE BIRYANI

INGREDIENTS:

  1. Green Chilies
  2. Black Cardamon
  3. Green Cardamon
  4. Cumin Seeds
  5. Black Peppercorns 
  6. Cinnamon Stick
  7. Bay Leaves
  8. Rice 
  9. Lemon Juice
  10. Oil
  11. Chicken
  12. Ginger Garlic Paste
  13. Onion
  14. Yogurt
  15. White Pepper Powder
  16. Salt
  17. Mace Powder
  18. Nutmeg Powder
  19. Black Pepper Powder
  20. Mint Leaves
  21. Coriander leaves
  22. Cream
  23. Kewra Water
  24. Cashew Paste

METHOD:

FOR RICE: (1/2 KG)

  • Take a bowl add 4 chopped green chilies, 2 black cardamon , 4 green cardamon , 1 tsp cumin seeds , 1/2 tsp black peppercorn , 1 cinnamon stick , 1/2 tsp cloves and 3 bay leaves. And garam masala bowl is ready.
  • Now take a pan fill with water bring it to boil add this garam masala mixture bowl in water and simmer for 5 minutes. Then add fried onion 2-3 tsp, add salt according to your requirement. 
  • Take 1/2 kg rice (soaked for 30 minutes) bring it to boil then add 1 tsp lemon juice and boil until 3/4th done. Strain and set aside.

FOR CHICKEN: (1/2 KG)

  • Take a pan add oil , 1/2 kg chicken with bone mix until color get change then add 1 cinnamon stick , 5 green cardamon , 1 tsp cumin seeds , 1/2 tsp black peppercorn , chopped green chilies , 1 tsp ginger garlic paste 1 slice cut onion. Cook until onions are translucent.
  • Now add 3/4 cup whisked yogurt , 1 tsp white pepper powder , salt , 1/4 tsp mace powder ( javatri powder) , 1/4 tsp nutmeg powder ( jaifil powder) , 1 tsp black pepper powder , mix well.
  • Cover partially and cook for 4-5 minutes or cook until oil separates. Add chopped mint and coriander leaves.
  • Now take 3 tbs cream , add 1 tbs kewra water in cream and 3 tbs cashew paste ( 15 cashew nuts grind with 2 tbs water. Cashew paste is ready) in cream. Mix well. and put this in chicken.

FOR BIRYANI:

  • Now add rice in chicken , fried onion and oil. 
  • Cover and steam cook on low flame for 5 minutes.

BUTTER CHICKEN (CHICKEN MAKHNI)

INGREDIENTS: Boneless Chicken Butter Cream Yogurt Red Chili Powder Coriander Powder Cumin Powder Salt Lemon Juice Oil Bay Leaves Onion Ginger Garlic Paste Cashew Nuts Tomatoes Tomato Paste Garam Masala Coriander Leaves METHOD: In bowl , take yogurt , red chili powder , coriander powder , cumin seeds , salt and lemon juice. Mix well. Now add boneless chicken and mix well. Marinate for 30 minutes. Take a pan add butter , oil , bay leaves. Mix well. Sliced onion , ginger garlic paste , cashew nuts , chopped tomatoes , salt and tomato paste. Cover and cook until tomatoes are tender. Remove bay leaves. Now blend above cook masala. To make fine puree. Now add this puree in the pan and bring it to boil. Add water if gravy is thick. Add cream , garam masala and fresh coriander leaves. TURKISH KEBAB / KABAB

INGREDIENTS: Onion  Red & Yellow Bell Pepper  Garlic Cloves Parsley Beef Mince Salt Black Pepper Powder Crushed Red Chili Garam Masala Powder Oil  METHOD: In chopper , Add onion cubes , red & yellow bell pepper cubes , garlic cloves and parsley. Chop coarsely. Now take a bowl add beef mince , add chopped mixture , salt , black pepper powder , crushed red chili , garam masala powder. Mix with hands until well combined. Marinate for 30 minutes. Take a pan add oil and spread oil all over the pan. Take oil according to the quantity of meat. Now spread evenly mince mixture with hands. Cook on medium low flames for 5 minutes. Now gently cut the mince into the shape of kebab and gently turn the each. Now cover the pan and cook on low flame until done.
